SPICY APPLESAUCE BUNDT CAKE | |
Grease and flour 12 cup Bundt pan. Bake at 350 degrees for 65-70 minutes. 1 c. golden raisins 3 c. all-purpose flour (divided) Toss raisins in 2 tbsp. flour 2 tsp. baking soda 1 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. allspice 1/2 tsp. salt Set aside. In large mixing bowl, beat until light and fluffy: 1 c. softened butter 1 c. packed brown sugar 1 c. granulated sugar 2 eggs (or substitute) Beat in dry ingredients alternating with 2 1/2 cups unsweetened applesauce. Fold in raisins with 1 cup chopped pecans. Pour into Bundt pan and bake. Cool, invert and remove to platter. Drizzle with glaze made of: 1 c. 10X sugar 2 tsp. lemon juice 1 tbsp. water |
