BOTTOM LAYER: 12 oz. chocolate chips 12 oz. butterscotch chips 2 c. peanut butter MIDDLE LAYER: 1 c. butter 1/2 c. evaporated milk 1 (3 3/4 oz.) pkg. vanilla pudding (not instant) 2 lbs. powdered sugar 1 tsp. maple flavoring Butter jelly roll pan. Melt chocolate chips, butterscotch chips and peanut butter in double boiler. Stir well. Spread 1/2 of the mixture in jelly roll pan and chill. Stir 2 cups peanuts into remaining mixture and set aside. Melt butter in large pan over low heat. Slowly add evaporated milk. Stir in vanilla pudding, stirring constantly. Cook until slightly thick (do not boil). Remove from heat and add powdered sugar and maple flavoring. Spread over chilled chocolate mixture. Drop reserved mixture of peanuts and chocolate on top and spread. (Cooper) |
