LEMON CUT-OUT COOKIES | |
3 c. sugar 1 c. softened butter 2 eggs 5 1/2 c. flour 2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 c. lemon juice Preheated 400 degree oven. Makes 6 dozen. (These are our favorite cookies for decorating. They are firm but not so crispy that they break. Vanilla may be used instead of lemon as flavoring with enough water to make 1 cup.) Mix together sugar and butter, beat in eggs. Add dry ingredients alternately with lemon juice. Mix well. Chill overnight. (Chilling is important for ease in rolling out.) On well floured surface, roll out 1/4 of the dough to 1/8 inch thickness. Chill remaining dough. Cut out cookies with well-floured cookie cutters. Place 1 inch apart on slightly greased cookie sheets. Bake 6 to 8 minutes or until lightly browned on the edges. LEMON ICING: 1 1/4 c. powdered sugar 2 tbsp. lemon juice May be colored and "paint" with pastry brush onto cookies. Kids love to do these. Enjoy. |
