BROCCOLI CASSEROLE 
1 (10 3/4 oz.) can condensed cream of mushroom soup
1 c. mayo
2 eggs, slightly beaten
1 sm. onion, grated
2 (10 oz.) pkgs. frozen chopped broccoli, thawed & drained
1 c. shredded cheddar cheese
1/2 c. buttery cracker crumbs

In 1 1/2 quart casserole, stir undiluted soup, mayo, eggs and onion until well blended. Stir in broccoli and cheese. Sprinkle top with cracker crumbs. Bake in preheated 400 degree oven for 20 minutes or until lightly browned and bubbly. 6 servings. 480 calories.

Used this recipe but modified it. It was a hit at our Thanksgiving potluck!!! Left with an empty casserole dish :)
