CREAM OF PEA SOUP 
1 sm. onion, minced
2 tsp. dried mint
2 tbsp. butter
2 c. chicken broth
2 (10 oz. each) pkg. frozen green peas
1 c. milk
1/2 tsp. salt
1/4 tsp. pepper
1 green onion, sliced (optional)

In large saucepan, saute onion and mint in butter until onion is tender. Add broth and peas. Bring to a boil; reduce heat; cover and simmer 5 minutes. Puree in several batches in blender until smooth. Return to saucepan; add milk, salt and pepper. Heat through. Garnish with onions if desired.
