SWISS STEAK 
3/4 c. all purpose flour
1/2 tsp. salt
1/4 tsp. pepper
2 lb. beef round steak (top round or sirloin tip), 1 inch thick
8 oz. can tomatoes
1/2 c. minced onion
1/2 c. minced green pepper
1/2 tsp. salt
1/8 tsp. pepper

Stir together flour, salt and pepper. Sprinkle one side of meat with half the flour; pound in. Turn over and pound in remaining flour. Cut meat into 6 pieces. Melt shortening in large skillet, brown meat over medium heat, about 15 minutes. Cover tightly, simmer 1 hour. Add small amount of water if necessary. Mix remaining ingredients, pour over meat. Cover tightly, simmer 30 minutes or until tender.
