YAM CREOLE PIE 
1 unbaked 9" pie shell
1 c. crushed pecans
1/2 c. milk
1/4 c. white sugar
1/2 c. coconut
6-8 med. yams, cooked
1 egg
1/2 c. brown sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. vanilla

Mash and beat yams until smooth. Beat egg, milk and sugars. Combine with yams and heat thoroughly with spices and vanilla. Lightly sprinkle crushed pecans over inside of pie shell. Pour yam mixture over pecans. Bake in 400 degree oven until firm, about 30 minutes. Sprinkle remaining pecans (if any) mixed with coconut over entire pie. Return to oven until coconut is browned.
