YAM COCONUT PIE 
1 1/4 c. mashed yams
3 eggs, beaten
1/4 c. sugar
1/2 tsp. salt
1 c. toasted coconut
1/2 c. chopped nuts
2 c. milk
1 unbaked 9 inch pie shell

Combine yams and eggs; beat well. Add sugar, salt, coconut, and nuts. Mix well. Add milk and mix well. Turn into pie shell. Bake in hot oven (400 degrees) for 1 hour or until knife inserted in center comes out clean. Cool thoroughly. Top with meringue, if desired.

Meringue: Beat 3 egg whites with 1/8 teaspoon cream of tartar and dash of salt until frothy. Gradually add 6 tablespoons sugar, one tablespoon at a time, beating constantly. Beat until stiff. Spread over yam filling. Bake in 325 degree oven until lightly browned.
