YAM PIE 
2 c. mashed cooked yams
3/4 c. packed dark brown sugar
2 tbsp. butter, melted
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1/4 tsp. all spice
3 eggs
2/3 c. instant non-fat dry milk crystals (powedred)
1 c. water
1 (9 in.) pie shell, unbaked
Cool Whip, optional

Combine yams, sugar, butter, salt, spices and eggs; beat until well blended. Stir milk crystals into water; add to yam mixture. Pour into pie shell. Bake at 375 degrees for 1 hour or until set. Cool thoroughly. Garnish with Cool Whip and candied ginger, if desired.
