CHILI-CHEESY RICE 
1 c. chopped onion
1 c. cream style cottage cheese
1/8 tsp. pepper
4 c. rice
2 c. shredded cheddar cheese
1/4 c. melted butter
1/2 tsp. salt
3 (4 oz.) cans green chilies
2 c. sour cream

Saute onion in butter. Remove from heat, add remaining ingredients except cheddar cheese. Spoon half of the rice mixture into greased 2 quart casserole dish. Top with half of cheese. Spoon in the remaining rice and top with the rest of the cheese. Bake in 375 degree oven for 25 minutes.
