CHEESY TUNA RICE MUFFINS 
2 c. cooked rice
1 c. shredded cheddar cheese
1 (6 1/2 oz.) can tuna, drained & flaked
3/4 c. black olives, sliced in thirds
1 tbsp. instant chopped onions
1 tbsp. parsley
1 tsp. seasoned salt

Combine above ingredients. Add 2 beaten eggs and 2 tablespoons milk. Mix thoroughly. Spray 6 muffin cups with Pam. Divide rice into cups. Bake in 375 degree oven for 15 minutes. Serve with Tangy Butter Sauce. Combine: 1 tbsp. lemon juice 1/2 tsp. seasoned salt 1/2 tsp. parsley

Spoon over muffins.
