BLUEBERRY LEMON MUFFINS 
1 1/2 c. flour
1/2 c. cream of rice hot cereal
4 tsp. baking powder
3/4 c. milk
1/2 c. packed brown sugar
1/3 c. butter, softened
1 egg
1 tsp. vanilla flavoring
1/2 tsp. grated lemon
1 c. fresh or frozen blueberries

In mixing bowl, combine all ingredients together. Let ingredients set for 5 minutes. Spoon batter into greased muffin pan liners.

Bake until done.
