MEAT/CHEESE SPINACH MANICOTTI 
1/2 lb. ground beef or Italian sausage
1 pkg. frozen spinach, drained
8 oz. Mozzarella cheese
1 pt. cottage cheese
12 manicotta shells
3 14.5oz or larger cans tomato sauce
Parmesan cheese
2 cloves garlic
Instant minced onion
Oregano leaves
Basil
Marjoram
Salt and pepper
Lemon juice
Nutmeg
Parsley

Sauce: Mix tomato sauce, garlic, 1/2 teaspoon salt, 1/2 teaspoon oregano leaves, 1/4 teaspoon pepper. Simmer for 30 minutes.

Cheese-spinach manicotti: mix spinach, cottage cheese, 1/4 cup instant onions, 1/2 tsp. basil, 1/2 tsp. salt, 1/4 tsp. nutmeg, 1/8 tsp. pepper, 2 tbsp. lemon juice.

Meat Manicotti: Mix cooked meat, mozzarella cheese, 2 tbsp. parsley, 2 tsp. instant onion, 1/4 tsp. marjoram, 1/4 tsp. oregano and cottage cheese.

Stuff parboiled manicotti with each mixture. In baking dish, cover bottom with sauce, lay manicotti on sauce. Cover manicotti with remaining sauce. Bake, covered, in 400 degree oven for 40 minutes. Remove cover and sprinkle mozzarella cheese and Parmesan cheese over dish. Bake 5 to 10 minutes more.
