FRENCH FRIED EGGPLANT | |
1 med. eggplant 1 egg Bisquick Cornmeal Salt & pepper Oil Peel eggplant and cut up like French fries. Soak in slightly salted water for 1 hour. Drain and pat dry. Dip into beaten egg. Flour with equal mix of Bisquick and cornmeal plus salt and pepper to taste. Drop into hot frying oil and fry as you would potatoes. Drain on paper towel and serve. |
