SQUASH CASSEROLE 
2 c. squash
2 eggs
1 c. evaporated milk
1 c. grated cheese
2 c. Ritz cracker crumbs
3/4 stick butter
1 tsp. black pepper
1 c. chopped onions

Cook squash until tender before measuring. Drain. Add butter, salt and pepper and milk. Mix all together. Add beaten eggs, onions, cheese and cracker crumbs. Pour into a greased casserole dish and bake at 375 degrees for 40 minutes.
