RICOTTA SPINACH PIE 
2 (8 or 9 inch) pastry shells, partially baked until light brown
2 (15 oz.) containers ricotta cheese
6 eggs, beaten
1/2 c. butter, melted
1 (8 oz.) Cheddar cheese, shredded
1/4 c. grated Parmesan cheese
1 (10 oz.) pkg. frozen spinach, thawed, drained & chopped into sm. pieces
6 tbsp. flour
Salt & pepper to taste

Combine all ingredients; mix well. Place in partially baked pastry shells. Bake at 350 degrees for 45 minutes or until crust is a golden brown. Serves 12.
