ORIENTAL CHICKEN 
2 tbsp. soy sauce
2 tsp. lemon juice
2 or 3 cloves garlic, minced
2 to 3 tsp. minced or grated fresh ginger
1/2 tsp. cayenne pepper
1/2 tsp. sugar
1 whole roasting chicken (about 3 lbs.)

Combine the first 6 ingredients and pour over the uncooked chicken. Rub it thoroughly over the chicken and under the breast skin. Place in a large bowl and let stand, loosely covered, for 1 1/2 hours, turning over 3 or 4 times.

Heat oven to 375 degrees. Place chicken breast side up in a small roasting pan or shallow casserole. Roast 30 minutes. Lower heat to 350 degrees. Roast 30 to 35 minutes more, until juices run clear when thickest part of thigh is pierced. Remove from oven. Let stand 10 to 15 minutes. Carve and serve. Serves 2 to 4.
