MOLDED CUCUMBER SALAD 
1 pkg. (3 oz.) lime gelatin dessert
3/4 c. hot water
2 (3 oz.) pkgs. cream cheese, softened
1 tbsp. horseradish
1 c. mayonnaise (or salad dressing)
1/4 tsp. salt
2 tbsp. lemon juice
3/4 c. cucumber, drained, ground
1/4 c. finely chopped green onions

Add gelatin to hot water, stirring until thoroughly dissolved. Add mayonnaise, cream cheese, horseradish, salt and lemon juice. Beat with egg beater (or portable mixer) until smooth. Chill in refrigerator until partially set. Blend in cucumber and onion. Pour into 3 cup mold and chill until firm. Try recipe, using individual ring molds and fill center with tuna fish or shrimp salad. Garnish with hard cooked egg wedges and lettuce. Can also double the recipe and use a 6 cup ring mold. Larger recipe serves 6 to 8 persons.
