OATMEAL PUDDING COOKIES 
1 c. butter
3/4 c. brown sugar
1/4 c. granulated sugar
2 eggs
1 pkg. pudding (not instant)
1 1/2 c. flour
1 tsp. baking soda
3 1/2 c. quick oats
1 tsp. vanilla
1 tsp. hot water
3/4 - 1 c. pecans or chips (as desired)

Cream together butter, brown sugar and granulated sugar. Add eggs. Stir in pudding. Use vanilla with pecans and chocolate with chocolate chips. Sift together and add flour and soda. Mix in well the oats, vanilla and hot water. Add pecans or chips.

Turn out onto floured 18" wax paper strip. Shape with floured hands into a 2 1/2" diameter roll. Square off sides. Roll up wax paper around cookie roll. Chill overnight in freezer. Slice into 1/3" slices. Bake at 350 degrees for 15 minutes on greased cookie sheet until lightly brown.

This method can be used for chocolate chip cookies if miniature chips are used. Cookies can be mixed and stored already baked off as needed for freshest taste. An original recipe.
