ZUCCHINI WITH INDIAN SPICES 
2 zucchini, about 1 lb.
1 lg. onion
2 cloves garlic
1 tbsp. oil
1 tbsp. mustard seeds
1 tsp. ginger
3/4 tsp. turmeric
Salt and pepper

Cut zucchini into strips 2 inches long. Chop onion and garlic. Heat oil in frying pan until very hot. Add mustard seeds. Reduce heat, cover until seeds pop. Add rest of ingredients, except zucchini. Cook until soft. Add zucchini. Cook until tender, about 15 minutes.

I was looking for a simple zucchini dish (since I have 5 large zucchini from my friend's garden) with Indian flavors. I doubled the garlic and skipped the turmeric -- I might have added some freshly ground black pepper but no salt. The zucchini was delicious! My partner and I declared it the best zucchini dish ever!

I had a whole lot of zucchinis and hoped that I could cook them indian style, it was fabulous, so tasty and the texture of the cooked meal was superb, I did not know that zuchini could taste so good, only ever had them aussie style in the past which are usually water logged so have always avoided them, GREAT RECIPE!
