ZUCCHINI WITH INDIAN SPICES | |
2 zucchini, about 1 lb. 1 lg. onion 2 cloves garlic 1 tbsp. oil 1 tbsp. mustard seeds 1 tsp. ginger 3/4 tsp. turmeric Salt and pepper Cut zucchini into strips 2 inches long. Chop onion and garlic. Heat oil in frying pan until very hot. Add mustard seeds. Reduce heat, cover until seeds pop. Add rest of ingredients, except zucchini. Cook until soft. Add zucchini. Cook until tender, about 15 minutes. |
