CARROTS AND RANCH MIX | |
1/3 to 1/2 cup Ranch dressing (HIDDEN VALLEY®) 3 tbsp. blue cheese 1 tbsp. Parmesan cheese 2 slices bread, lightly toasted 1 (8 oz.) can diced carrots, drained 2 tbsp. olive oil, divided In a bowl, mix Ranch dressing, blue cheese and Parmesan cheese. Set aside. Toast bread slices (2 minutes on low heat). Put 1/2 tablespoon of olive oil into pan and heat on medium heat for 1 minute then add all carrots to pan (no juice, plain diced carrots). Put 1 spoonful of cheese mixture into pan with carrots and stir for about 5 minutes (add 1 more spoonful of cheese mixture every 2 minutes). Pour carrots into bowl with the remaining cheese mixture. Put a pinch of olive oil onto each toasted bread slice. Spread around. Put carrot and Ranch mixture onto bread and fold the bread hotdog style. Enjoy! Serves 2. Submitted by: Victoria C. |
