CHICKEN WITH ZUCCHINI & TOMATOES 
1/2-3/4 lb. stir fry chicken
1 med. onion, sliced into thin rings
2 cloves garlic, crushed
1 can whole tomatoes, slightly chopped
4 oz. sliced mushrooms
1 med. zucchini, sliced & quartered
1 tsp. oregano
Salt & pepper to taste

Saute onion and garlic in tablespoon of oil until tender. Add tomatoes, oregano, salt and pepper. Heat until boiling. Reduce heat and simmer for 10 minutes, covered, adding water if needed.

Meanwhile quickly brown chicken strips in lightly oiled pan. Add the chicken to the tomatoes along with the mushrooms and zucchini. Cook until the zucchini is tender about 10 minutes. Serve over rice. Top with grated cheese.
