ESCALLOPED EGGPLANT 
1 eggplant, pared and diced
1 onion, diced
3 tbsp. melted butter
3 slices bread, cubed
1/2 c. milk
1 egg
1 green pepper, diced
1/2 c. grated Cheddar cheese

Boil eggplant and onion together for 10 minutes, drain. Pour melted butter over cubed bread. Beat together milk, egg and green pepper. Mix all ingredients together; salt to taste.
