SPINACH SAUSAGE PIE | |
1 lb. sweet Italian sausage 1 lb. Ricotta cheese 1 (8 oz.) pkg. Mozzarella cheese, shredded 5 lg. eggs 2 pkgs. frozen chopped spinach, thawed Skin and cut sausage coarsely. Cook until lightly browned but not dry; drain. Squeeze out the excess water from spinach and put into bowl. Add the sausage, Ricotta cheese, Mozzarella cheese, and eggs; mix. Pour into 10 inch pie pan. Bake at 400 degrees for 10 minutes, then at 375 degrees for 40 to 60 minutes or until knife inserted comes out clean. If using for a party dish, bake in a 13 x 9 inch (will be flatter) for 40 minutes. Note: Tastes very good the next day. It makes it's own crust. |
