HOBO STEW | |
3 lbs. round steak, trimmed, cubed & pre browned 4 med. potatoes, peeled & diced 4 lg. carrots, peeled & sliced 6 pieces celery, sliced 1 green pepper, diced 2 sm. onions, chopped 2 pkgs. Lawry stew seasoning mix 1 (11 oz.) can whole kernel corn, drained 1 to 2 tsp. salt 1 to 2 tsp. pepper Water to cover Prepare 20 to 25 charcoal briquets. Place 10 to 15 briquets under 5 quart Dutch oven. Place potatoes, carrots, celery, pepper and onion in Dutch oven. Add enough water to cover. Place lid on top, place 8 to 10 briquets on lid. Bring to a boil, boil 15 minutes. Carefully remove lid. Add meat, stew mix, salt and pepper. Cover and simmer 15 to 30 minutes more, adding more briquets as necessary. When vegetables are tender, add corn. Serves 6 to 8. Can also be made on the stove. |
