CHICKEN PASTA WITH GARLIC 
8 oz. minced garlic
5 1/2 tbsp. olive oil
1 1/2 lb. sliced shittake mushrooms
2 c. diced plum tomatoes
1 c. chopped green onions
1 tsp. crushed red pepper
2 c. chicken broth
1 1/2 lb. skinned, grilled chicken, diced
1 (16 oz.) pkg. cooked, drained bow tie noodles
4 oz. chopped and divided cilantro

Cook and stir garlic in hot oil in large skillet over medium-high heat until lightly browned. Add mushrooms, tomatoes, green onions and crushed red pepper. Cook and stir 2 minutes more. Add broth, noodles and half of the cilantro; heat through. Garnish with remaining cilantro. 6-8 servings.
