BANANA MUFFINS 
2 1/4 c. flour
1 1/2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1/2 c. shortening
2 eggs
2/3 c. butter or sour milk
2 bananas, mashed
1/2 c. chopped nuts, optional

Combine all ingredients except nuts in mixing bowl. Beat 2 minutes at medium speed. Add the nuts. Fill paper lined cupcake pans 2/3 full. Bake 375 degrees, 20-25 minutes. 24 muffins.

To sour milk, combine 1 tablespoon vinegar and 2/3 cup milk.
