BROCCOLI & RICE CASSEROLE 
10 oz. frozen broccoli tops
3 slices onion
1/3 stick butter
1 c. uncooked rice
5 oz. sharp Cheddar cheese
2 cans cream of mushroom soup

Cook 1 cup of rice. While rice is cooking, saute the broccoli tops and the chopped onions in 1/3 stick of butter in saucepan. Saute until the onions and broccoli are tender. When the broccoli is tender, open the 2 cans of mushroom soup and mix in saucepan over low heat with the onions and broccoli. After the soup and broccoli are mixed well, blend into the mixture the cooked rice.

Once this is all mixed together, fill halfway a 2 quart casserole dish. Sprinkle 1/2 the grated cheese over this and fill the casserole dish with the remaining rice mixture. Then sprinkle the remaining cheese on top. Cook uncovered in a 305 degree oven for about 30 minutes, or until cheese is fully melted.
