RICE & BROCCOLI AU GRATIN 
1 c. Minute Rice
1/2 c. boiling water
1/2 med. onion, chopped
1 stick butter
2 pkgs. chopped frozen broccoli
1 can cream of mushroom soup
1 can mushrooms (opt.)
1 jar Old English cheese (Kraft)

1. Put rice and boiling water in casserole dish.

2. Saute onion in butter for 15 minutes. Add to rice.

3. Cook broccoli according to package directions (use the right amount of water). DO NOT DRAIN. Add to rice.

4. Heat soup and cheese to blend better. Mix thoroughly. Add to rice mixture; blend well.

5. Bake, uncovered at 400 degrees for 15 minutes.

This dish is a favorite with broccoli lovers and non-lovers alike. Great for serving at a buffet. It's always the first to go!
