“CHEESE PUFFS” IS IN:

CHEESE PUFFS 
1/2 cup plain flour
1 teaspoon baking powder
1/4 teaspoon salt
pinch of cayenne pepper
1 1/2 ounces butter
1 oz finely grated cheese
1 egg, beaten
water

Sift dry ingredients. With a pastry blender or two forks, or using your fingers, rub the butter into the flour. Add cheese and beaten egg mixed with a teaspoon or so of cold water.

Knead into a soft dough. Roll out to about 1/4 inch thickness and cut into small rounds.

Fry in deep fat until golden brown. Turn once and lift out using a slotted spoon onto paper to drain. Season lightly with salt, if desired. Toss in finely grated cheese and serve while still hot.
