CHOCOLATE ECLAIRS | |
1 c. water 1 c. flour 1/2 c. butter 4 eggs Heat oven to 400 degrees. Heat water and butter to rolling boil. Stir in flour. Stir constantly over low heat for 1 minute or until mixture forms balls. Remove from heat, beat in eggs all at one time. Drop dough onto ungreased baking sheet and bake for 35 to 40 minutes until golden. Cool away from draft. FROSTING: 1 ounce semi-sweet chocolate and 1 teaspoon butter melted over low heat. Remove from heat and add 1 cup confectioners' sugar and 2 tablespoons hot water. Beat until smooth. INSIDES: Blend 1 package (3 1/2 ounce) vanilla instant pudding and 1 cup milk. Add 2 cups Cool Whip. Mix and put inside shell. Top with chocolate. |
