CHICKEN FOR TWO 
2 skinless, boneless chicken breast
1/4 lb. low-salt sliced ham
1/4 lb. Alpine Lace low-salt Swiss cheese
2 tbsp. butter

Flatten breast, make them as thin as possible. Layer slices of ham and slice of cheese inside of breast. Roll tightly, like a jelly roll. Keep tightly sealed with a toothpick. Brush chicken with butter. Seal in aluminum foil. Bake at 350 degrees for 1 hour in a small toaster oven. Serve with rice and vegetables.
