PICK ME UP LAYERED PIZZA LOAF | |
1 (1 lb.) loaf frozen bread dough 1 (10 oz.) pkg. frozen spinach, thawed and squeezed dry 1/3 c. fresh grated Parmesan cheese 1 egg 3 tbsp. finely chopped fresh basil 12 oz. Mozzarella cheese, shredded 3/4 c. lb. Italian sausage, cooked and cut into slices 1/4 c. pizza sauce 1/4 lb. thinly sliced pepperoni 1/2 c. sliced black olives Let frozen dough thaw until pliable. On a light floured surface, roll out 3/4 of the bread dough. Line a greased loaf pan with dough. In a medium size bowl, combine spinach, Parmesan cheese, egg and basil and set this to the side. Place 1/2 of the shredded Mozzarella cheese on top of bread layer (which is lined in the loaf pan). Top with cooked sausage; pizza sauce spinach mixture, remaining Mozzarella cheese, pepperoni slices, and olives. Try to keep the ingredients layered. Roll the remaining dough into rectangle shape and cover to fit loaf pan. Cover all filling and seal edges by pressing firmly together. Cut off the excess dough. Cut two slits on top of the loaf to let steam escape. Bake in a preheated 375 degree oven for 35 to 45 minutes, or until the crust is well browned and sounds hollow when tapped. Remove from oven and let cool in pan for 15 minutes. Remove from pan and allow cooling time of at least 1 hour. It slices better when cooled. Serve warmed or cool. 8 servings. |
