APRICOT COMPOTE 
4 (1 lb.) cans apricot halves
2 stacks Ritz crackers
Brown sugar
1 stick butter

Drain apricot halves. Put 2 cans in 9 x 13 inch casserole. Cover with thin layer of brown sugar. Put remaining apricots on top and cover with another thin layer of brown sugar. Crush Ritz crackers and sprinkle generously over top. Drizzle with melted butter. Bake at 350 degrees for 1 hour.
