TACO CASSEROLE - Microwave 
1 lb. ground beef
1 med. onion, chopped
1 c. tomato sauce
1/2 c. water
1 c. half & half
8 oz. Monterey Jack, shredded
2 tbsp. butter
2 tbsp. diced green chilies
1 pkg. taco seasoned mix
2 eggs
1 pkg. (6 oz.) corn chips
1 c. sour cream
1/2 c. grated Cheddar cheese

Cook beef in casserole dish 5-6 minutes. Drain beef and remove from dish. Place butter, onion and chilies in casserole and microwave 2-2 1/2 minutes, stirring after 1 minute. Add tomato sauce, taco seasoning and water. Microwave 1-1 1/2 minutes.

Beat eggs, blend in half & half. Add this mixture slowly to tomato sauce, stirring constantly.

In a 2 quart casserole, place 1/4 of corn chips, top 1/4 meat mix, 1/4 cheese (Monterey Jack) and 1/4 of sauce; repeat layers. Microwave 13-15 minutes. Place sour cream and Cheddar cheese on top. Microwave 2 minutes until cheese is melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
