HOT PEPPER JELLY 
4 lg. green peppers, chopped
12 green hot peppers, chopped
7 c. sugar
1 1/2 c. white vinegar
2 (6 oz.) bottle Certo
Red or green food coloring

Combine sugar, vinegar, and pepper in a pan; bring to a boil stirring constantly. Reduce heat, simmer 10 minutes. Remove from heat and strain.

Return juice to pan, add several drops of food coloring. Add Certo and bring to a rapid boil for 1 minute. Remove from heat and pour in hot jars. Makes 10 half pints.
