ZUCCHINI CASSEROLE 
4 c. chopped zucchini
1 c. sliced carrots
1 c. chopped celery
1 med. onion, chopped

Parboil 5 minutes; drain. Add to vegetables:

1 bag Pepperidge Farm stuffing mix
1 sm. container sour cream
1 can cream of chicken soup

Mix altogether. Put in casserole dish and bake in 350 degree oven for 30 minutes. Buttered bread crumbs may be added on top.
