MOCK COCONUT CREAM PIE | |
80 Ritz crackers (crushed) 1 1/2 sticks butter (melted) 1/2 gal. vanilla ice cream (let soften just a little) 2 boxes instant coconut cream pudding (dry) 1 1/4 c. milk 1 lg. Cool Whip Mix crushed crackers and melted butter together and press in 9x13 pan. (This is the crust.) Mix ice cream, pudding and milk together and stir until well blended. Spread on crust. Top with Cool Whip and sprinkle with toasted coconut or a few crumbs from crust mixture. Freeze. Take out of freezer 10 to 15 minutes before you serve it. |
