MARINATED ZUCCHINI SALAD | |
6 sm. zucchini (about 1 1/4 lb.), thinly sliced 1/2 c. chopped green pepper 1/2 c. diced celery 1/2 c. diced onion 1 (2 oz.) jar diced pimento, drained 2/3 c. vinegar 1/3 c. vegetable oil 1/2 c. sugar 3 tbsp. white wine vinegar 1/2 tsp. salt 1/2 tsp. pepper Combine zucchini, green pepper, celery, onion, and pimento in a medium bowl; set aside. Combine remaining ingredients in a jar; cover tightly and shake vigorously. Pour marinade over vegetables; toss gently. Cover and chill 8 hours or overnight. Serve with a slotted spoon. Yield: 8 servings. |
