MARINATED VEGETABLE SALAD | |
Vegetables, washed, prepared, bite sized - zucchini, sliced; cherry tomatoes, halved; mushrooms; broccoli Other - 1 med. can black olives, drained 1 sm. jar marinated artichoke hearts (include marinade) 1 med. red onion, sliced thin, halved MARINADE: 1 c. red wine vinegar Basil Garlic powder Pepper Italian seasoning In bowl, combine all vegetables, olives, artichoke hearts, onions. In jar, shake all marinade ingredients, then pour over salad. Toss well. Let stand, tossing occasionally for an hour. Before serving, drain excess marinade. Sprinkle with vinegar to taste. |
