AUNT PAULINE'S APPLE CAKE 
3 eggs
1 c. vegetable oil
1 c. sugar
2 c. self rising flour
1 tsp. cinnamon
1/2 tsp. nutmeg
3 c. cooking apples, peeled,
Cored and diced
1/2 c. raisins
1/2 c. nuts.

1. Heat oven at 350 degrees. 2. In a large bowl beat together eggs, oil and sugar with an electric beater until smooth. 3. Sift flour and spices together reserving 1 tablespoon for later use. 4. Gradually add dry ingredients to liquid. Continue mixing until well blended and smooth. Toss apples, raisins and nuts with remaining flour mixture and fold into batter. 5. Lightly grease and flour a bunt pan. Pour in batter. 6. Bake for 50 to 55 minutes or until pick comes out clean. 7. Cool in pan. Remove and serve.
