CRUNCHY APPLE CAKE 
2 c. sugar
1 c. Crisco oil
2 eggs
2 1/2 c. self-rising flour
1 tsp. cinnamon
1 tsp. vanilla
1 c. nuts, chopped
3 c. apples, diced

Mix sugar, oil, then eggs. Mix well. Add dry ingredients, then apples. Pour into 9 x 13 inch baking pan. Top with 1 (6 ounce) package butterscotch morsels. Bake in a 350 degree oven for 35 minutes.
