PIXIE BOSCH'S CRUNCHY RHUBARB
CAKE
 
1 3/4 c. sugar, save 1/4 c. for topping
1/2 c. shortening
1 c. buttermilk
1 tsp. baking soda
1/2 tsp. vanilla
2 tsp. cinnamon for topping
1 egg
2 c. flour
1/4 tsp. salt
2-3 c. diced rhubarb

Beat egg. Stir in all ingredients. Turn into 9 x 13 inch pan sprayed with Pam. Sprinkle top with reserved sugar and cinnamon. Bake at 350 degrees for 35 minutes. Test for doneness. Increase baking time for more rhubarb.
