PEANUT BRITTLE 
3 c. salted peanuts
1 c. dark corn syrup
1/2 c. water
3 c. sugar
1 tsp. baking soda
1 tbsp. butter

Put sugar, water and syrup in a heavy saucepan. Cook over medium heat, stirring constantly, until sugar is dissolved and mixture starts to boil. Continue to boil without stirring until mixture reaches soft crack (280 degrees). Gradually add peanuts and continue cooking until mixture reaches 300 degrees (hard crack). Remove from heat. Stir in butter and soda. Mix gently, but quickly. Pour onto 2 buttered cookie sheets.
