1/4 c. butter 1 slightly beaten egg 2/3 c. sugar 1/2 c. raisins 1/4 c. finely crushed saltine crackers (about 7) 1/4 c. lemon juice Pastry Melt butter; cool. Mix with next 5 ingredients; set aside. Prepare Pastry; roll 1/8 inch thick. Cut into 3-inch rounds with floured biscuit cutter. Place in 1 3/4 inch muffin pans. Spoon about 1 tablespoon raisin filling in each. Bake at 400 degrees for 15 to 18 minutes. Cool slightly; remove to rack. Makes 2 dozen. PASTRY: Stir 1 1/2 cups all-purpose flour with 1/2 teaspoon salt. Cut in 1/2 cup shortening until size of small peas. Sprinkle 4 to 5 tablespoons cold water over all, one tablespoon at a time; toss after each addition. Form into a ball; flatten on lightly floured surface. |
