CHILLED CORN SALAD 
1 (12 oz.) can whole kernel corn, drained
1 sm. onion, chopped
1/2 c. chopped green pepper
2 tbsp. minced parsley
2 tbsp. cider vinegar
1 tbsp. oil
1/4 tsp. salt
1/4 tsp. pepper
Lettuce leaves; optional

Combine all ingredients. Chill several hours or overnight. Serve on lettuce leaves, if desired. Makes 4-6 servings.
