PINEAPPLE FRITTERS 
1 egg
1 c. milk (scant)
3 tbsp. sugar
2 1/2 tsp. baking powder
1 c. crushed and drained pineapple
2 tbsp. butter, melted
2 1/2 c. flour to make stiff batter

Combine in given order. Add pineapple to batter last. Drop a tablespoonful at a time in hot deep fat.

SAUCE:

1 c. light brown sugar
2 tbsp. flour
1/2 lemon juice
1 c. water
1 c. pineapple juice
2 tbsp. butter

Combine and cook until clear.
