CHICKEN CARIBBEAN 
2 1/2 to 3 lb. chicken
1/4 c. oil
1/2 c. onion, chopped
1/2 c. green pepper
1 can mushrooms, drained
1 (1 lb.) can tomatoes
1 tsp. curry powder
1/2 tsp. salt
1/4 tsp. Tabasco
3 whole cloves

Chicken may be breasts or thighs or a whole chicken, cut into parts and skinned. Brown chicken in oil. Remove meat from skillet and set aside. Saute onion, green pepper and mushrooms in skillet 3 minutes. Add tomato, curry, salt, garlic, Tabasco, cloves; stir. Return chicken to pot; cover. Simmer 30 minutes or until chicken is tender. Serve with green vegetables and biscuits.
