CHICKEN CURRY 
2 lbs. boneless chicken, cut in bite sized pieces
4 garlic cloves, crushed
1 onion, chopped
1 c. water
3 tsp. curry powder
1/4 tsp. chili powder
2 tbsp. canola oil
1 ripe tomato, chopped
2 potatoes, peeled & cubed
1/4 inch green ginger root, crushed
Salt to taste

Saute onions, garlic and ginger in oil until lightly brown. Add tomatoes, curry powder and chili powder. Fry for one minute. Add chicken and salt. Stir well and cook about 5 minutes. Add water. Cover and cook 5 minutes, then add potatoes. Cook covered on medium heat about 15 minutes, until potatoes are done. Serve over white steamed rice.
