BAKED SWEET POTATOES WITH ORANGE
MARMALADE
 
8 med. sweet potatoes, cooked and peeled
1/4 c. brown sugar, firmly packed
1/2 tsp. salt
1 c. light cream (or evaporated milk)
1 1/2 c. orange marmalade
16 marshmallows

Cut potatoes into 1 inch slices; place in greased 13x9x5 inch pan. Sprinkle with brown sugar and salt. Pour cream over potatoes. Bake in 350 degree oven 45 minutes. Remove from oven; spread marmalade over potatoes; top with marshmallows. Return to oven for 15 to 20 minutes or until lightly browned. Serve with roast pork or duck. Serves 8 to 10.
